Title: Grandma's Applesauce Cake

Yield: 6 Servings

1/4cButter, softened
3lgEggs
1/2cUnsweetened apple juice
1/2cUnsweetened applesauce
2cUnbleached white flour
2tsBaking powder
1tsBaking soda
2tsCinnamon
1/2cRaisins; optional
1 Fresh apple, washed, peeled
  Cored & thinly sliced
  Topping:
  Unsweetened applesauce
  Warmed over medium heat..

In a medium sized bowl beat together until creamy - butter, eggs, apple juice, and applesauce. Add flour, baking powder, baking soda, and cinnamon. Beat well. Stir in raisins if desired. Oil and flour an 8 square baking pan. Line bottom of pan, 1 layer deep, with thinly sliced apple. Spoon batter over apples and smooth top. Bake at 350 degrees for 25 to 30 minutes or until well-browned. Invert onto a wire rack to cool, apple side up.
